Place all the ingredients inside a cocktail shaker filled with ice, shake vigorously, strain into a rocks glass filled with ice. Garnish with sage, and gooseberries.
How to make the gooseberry syrup:
Place 1 cup of water and 12 gooseberries into a pod and bring to boil. Using a muddler, gently muddle the gooseberries, and add 1 cup of sugar. Turn off the heat and stir until sugar has been dissolved. Strain, and let cool off. Store in the fridge for up 1 week.
